Ingredients
  

  • 1 beetroot
  • 1 cup yoghurt
  • 1 cucumber
  • 1 teaspoon salt
  • 2 tablespoon coriander

Instructions
 

  • Boil beetroot and mash and set aside.
  • In a bowl, whisk the yoghurt until smooth and add the beetroot and blend it in.
  • Add the diced cucumber, season with salt and mix well.
  • Garnish with fresh coriander and serve chilled.
