- 1 beetroot
- 1 cup yoghurt
- 1 cucumber
- 1 teaspoon salt
- 2 tablespoon coriander
Boil beetroot and mash and set aside.
In a bowl, whisk the yoghurt until smooth and add the beetroot and blend it in.
Add the diced cucumber, season with salt and mix well.
Garnish with fresh coriander and serve chilled.
