- 1 small ripe banana
- 2 tablespoons castor sugar
- ¼ teaspoon ground cinnamon
- 1 tablespoon salted melted butter
- 2 tablespoons milk
- 1 vanilla bean scraped
- 3 tablespoons all-purpose flour
- ½ teaspoon baking powder
Mash the Banana: In a bowl, use a fork to mash the banana until smooth.
Mix Sugar & Cinnamon: Add the castor sugar and ground cinnamon, stirring until well combined.
Add Wet Ingredients: Pour in the melted butter, scraped vanilla bean, and milk. Stir until everything is well mixed.
Incorporate Dry Ingredients: Add flour and gently fold it in, then add the baking powder and mix until smooth.
Bake: Pour the batter into a ramekin and bake at 180°C for 20-25 minutes, or until golden brown on top.
Cool & Enjoy: Let the bread cool slightly before diving in!
- Use a Very Ripe Banana: The riper the banana, the sweeter and more flavorful your bread will be.
- Avoid Overmixing: Gently fold the ingredients to keep the bread light and fluffy.
- Adjust Milk as Needed: If your batter looks too thick, add a few drops of milk until smooth.
- Keep an Eye on Baking Time: Each oven varies, so check after 20 minutes and remove once golden brown.
