Ingredients

  • cup flour all-purpose, for structure
  • ½ teaspoon baking powder to help the cookie rise
  • 3 tablespoon butter softened, for that melt-in-your-mouth texture
  • 1 tablespoon white sugar for sweetness
  • 2 tablespoon brown sugar adds depth of flavor
  • 1 tablespoon cream or 1 egg, for a richer texture
  • 1 vanilla bean scraped, for a natural vanilla flavor
  • 4 tablespoon milk to bring the dough together
  • sugar free Chocolate chunks or Choco chips as desired

Instructions

  • Prep the Chocolate: Chop the chocolate into chunks (or use chocolate chips if you prefer). Set aside.
  • Mix Dry Ingredients: In a bowl, whisk together the flour and baking powder until well combined.
  • Cream the Butter & Sugars: In a separate bowl, beat the softened butter, white sugar, and brown sugar until light and creamy. If you're using cream, add it in now, or substitute it with an egg for a richer texture. Add the scraped vanilla bean and mix well.
  • Combine Ingredients: Add the dry ingredients to the butter mixture and stir until just combined. Pour in the milk and stir again until smooth. Gently fold in the chocolate chunks or chips.
  • Chill the Dough: Refrigerate the dough for about 20 minutes to firm it up a bit. This step helps the cookie hold its shape while baking.
  • Form the Cookie: Preheat your oven to 180°C (350°F). Scoop and roll the dough into a ball and place it on a baking tray lined with parchment paper.
  • Bake: Bake for about 15 minutes, or until the top turns golden brown. Keep a close eye on it to avoid overbaking.
  • Cool & Enjoy: Let the cookie cool on the tray for a few minutes before transferring it to a wire rack to cool completely. Enjoy your freshly baked, gooey chocolate chip cookie!

Notes

  • Don’t Overmix: Once you add the dry ingredients, mix just enough to combine. Overmixing can result in a tough cookie.
  • Chill the Dough: Chilling the dough for 20 minutes helps the cookies bake evenly and prevents them from spreading too much.
  • Use Room Temperature Ingredients: Ensure the butter is softened and the cream or egg is at room temperature to avoid clumps and ensure a smooth dough.
  • Watch Baking Time: Oven temperatures can vary, so keep a close eye on your cookie and take it out when the edges are golden but the center is still soft.
